Italian Sweet and Sour Cherry Tomato Sauce
Serve over crusty bread, steak, grilled tuna, zucchini, grilled eggplant, chicken breast…you get the idea. This is delicious!
- 2 tbs olive oil
- 2 cloves garlic, minced
- 2 cups dry red wine
- 1/4 cup brown sugar
- 1 pint Footprints Edibles Fantastico cherry tomatoes, halved
- 2 tbs red wine vinegar
Warm olive oil in a 10” skillet over medium heat. Add garlic and cook 30 seconds until fragrant.
Add wine and brown sugar. Increase heat to medium-high and cook until wine reduces to 1/2 cup.
Add Footprints Edibles Fantastico cherry tomatoes and simmer for 3-4 minutes until liquid releases and begins to thicken.
Remove from heat, stir in vinegar and season with salt and pepper.
Season to taste with additional sugar or vinegar for a sweet/sour balance.
