Gremolata Vinaigrette

Serves 6-8

This classic Italian flavor combination of lemon, parsley and garlic adds an easy bit of flare to great summer greens.


  • 1 clove garlic, minced
  • 1/3 cup lemon juice
  • 1/2 tsp grated lemon zest
  • 2 tbs minced Footprints Edibles Splendid parsley
  • 1 tbs Dijon mustard
  • 2/3 cup olive oil - the good stuff!
  • 1/2 pound mesclun or other greens



Make vinaigrette" Place garlic on cutting board and sprinkle with coarse salt. Using the flat edge of your knife, mash into a smooth paste.

In a small bowl, whisk together garlic, lemon juice, Footprints Edibles Splendid flat parsley, and mustard.

Season to taste with pepper.

While whisking, drizzle in olive oil to form a thick, creamy emulsion.

Taste dressing with greens and season to taste with extra olive oil, salt and pepper as needed.

Lightly dress greens and enjoy!
