Sweet and light with the exotic spice of Thai basil and fresh juniper berry note of smooth gin, this cocktail is an easy drink. Maybe too easy! If you want to lighten it up, add a splash of club soda.
- 1 1/2 cups fresh pressed watermelon juice – recipe below
- 1/2 cup smooth gin
- 1/2 cup Footprint Edibles Thai Magic basil simple syrup – recipe below
- 2 tablespoon Ruby Red Grapefruit or other bitters
- lime slice to garnish
In a cocktail shaker with ice, add watermelon juice, gin, simple syrup and bitters.
Shake and strain in to a martini or lowball glass with ice. Garnish with a lime slice.
Squeeze into cocktail right before drinking.
To make watermelon juice, press cubed watermelon through a food mill or puree in a food processor. Strain it through a sieve and then again through a sieve lined with cheese cloth.
Footprints Edibles Magic Thai basil syrup:
Stir together 1/2 cup sugar and 1/2 cup water over medium high heat. Simmer until the sugar dissolves.
Remove from heat, and add 1 loosely packed cup whole Footprints Edibles Thai Magic basil leaves. Let steep for 15-20 minutes and strain to remove solids.
